Tiny but nutrient mighty! Why are microgreens good for you?
The thought that such a tiny sprout could be so ridiculously amazing for you kind of seems absurd. Right? It’s just so…. small. The power of those micro minis compared to their mature counterparts is insanely incredible. As the saying goes, “Never judge a book by its cover.” Why do microgreens fly so under the radar? They should be glorified for their plant power, put on a pedestal and implemented into our diets whenever possible. Knowledge is power… and so is good brain health.
What is a microgreen exactly? Why are microgreens so small? Microgreens start as a normal edible seedling, the kind that you plant normally to get the party started. A microgreen harvest takes place just 14 days after germination, yup, that quick after planting. So naturally, they are “micro” in size and typically green in the stem, making their name ever so fitting. The best part about these micro-baddies?… Research shows microgreens can contain anywhere from 4-6x the amount of nutrients compared to their mature counterparts. One study shows that just 2 ounces of micro broccoli contains the same amount of nutrients as an entire head of broccoli. Wow, right!
